  • 1 cup raw almonds or cashews
  • ¼ cup raw cacao powder
  • 2 tablespoons almond butter
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp hearts
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Desiccated coconut or cacao powder for rolling

Instructions

  1. Add almonds to a food processor and pulse until coarsely ground (not flour-fine — you want some texture).
  2. Add pitted dates, cacao powder, almond butter, coconut oil, chia seeds, hemp hearts, vanilla, and sea salt.
  3. Process until the mixture comes together and holds its shape when pressed between your fingers. If too dry, add 1 teaspoon of water at a time.
  4. Using your hands, roll the mixture into approximately 18-20 small balls (about 1 tablespoon each).
  5. Roll each bite in desiccated coconut, extra cacao powder, or leave them plain.
  6. Place on a parchment-lined tray and refrigerate for at least 30 minutes before enjoying.
  7. Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
